Wassail

Wassail
8 c apple cider
2 c orange juice
1- 46 oz can pineapple juice
2- 3" cinnamon sticks
1 T whole cloves
1/2 c honey

1. Place all ingredients in a slow cooker and cook on high for two hours. Strain out cinnamon sticks and cloves before serving.

Hawaiian Haystacks (or Chinese Sundaes)

Hawaiian Haystacks (or Chinese Sundaes)
3 T butter
1/2 onion, finely chopped
2 boneless, skinless chicken breasts, cut into bite-sized pieces
3 cloves garlic, finely minced
1/4 c flour
2 c milk
1 c chicken broth
1 t salt
1/2 t pepper
rice
Optional toppings:
shredded coconut
slivered almond
Cheddar cheese
celery
green onions
mushrooms
tomatoes
olives
mandarin oranges
peas
pineapple
chow mein noodles
water chestnuts

1. In a large pan, melt butter over medium heat.
2. Add onion and chicken and cook until onions are soft and chicken is cooked through, about 5-6 minutes.
3. Add the garlic and stir until fragrant, about a minute.
4. Sprinkle the flour into the pan and stir to combine; cook for a minute and then slowly whisk in the milk and chicken broth.
5. Cook, stirring constantly, until sauce comes to a simmer and then add the salt and pepper. Continue simmering, stirring frequently, until the sauce has thickened, about 5-8 minutes.
6. Serve over rice, topped with toppings of your choice.

GF Crustless Pizza

GF Crustless Pizza
Crust:
1- 8 oz pkg full fat cream cheese, softened
2 eggs
1/4 t black pepper
1 t garlic powder
1/4 c Parmesan cheese
Toppings:
1/2 c pizza sauce
1 1/2 c mozzarella cheese
pizza toppings - pepperoni, sausage, bacon, ham, peppers, pineapple, olives, etc
garlic powder
 

1. Preheat oven to 350* and lightly grease a 9x13 pan. 
2. Mix all crust ingredients together and spread on pan.
3. Bake for 12-15 minutes, until golden brown. Allow to cool for about 10 minutes before adding toppings.
4. Spread pizza sauce on crust and top with cheese and toppings; sprinkle with garlic powder and bake for another 8-10 minutes, until cheese is melted and bubbly.

Cranberry Pineapple Jello Salad

Cranberry Pineapple Jello Salad
6 c water, separated
1 1/2 c sugar
9 oz red jello (a 6 oz and a 3 oz, or 3- 3 oz boxes) [black cherry, strawberry, etc flavors]
20 oz crushed pineapple, drained
12 oz fresh cranberries, finely chopped

1. Boil 3 cups of water. Stir in sugar until dissolved, and then stir in jello powder until dissolved.
2. Pour 3 cups of very cold water into a large bowl and add your jello mixture.
3. Stir in pineapple and cranberries; place in the fridge for a few hours to set.

French Bread Pizza

French Bread Pizza
2 loaves French bread
1 or 2- 14 oz jar(s) of pizza sauce (depending on how saucy you like it)
pizza toppings (pepperoni, Canadian bacon, bell peppers, onions, pineapple, mushrooms, olives, etc)
2 c shredded mozzarella cheese

1. Preheat oven to 500* and line two cookie sheets with foil.
2. Cut each loaf of bread in half lengthwise, lay two halves on each cookie sheet cut-side up, and spread 1/4 of your sauce on each half.
3. Top each half with 1/2 c cheese and sprinkle with your favorite toppings.
4. Bake one cookie sheet at a time for 5-7 minutes each.

Hawaiian Chicken

Hawaiian Chicken
4 frozen chicken breasts, boneless/skinless
1- 20 oz can crushed pineapple
1- 16.5 oz bottle Hawaiian-Style BBQ Sauce (Archer Farms brand from Target)

1. Layer everything in your slow cooker and cook on low for 6 hours. If desired, shred chicken an hour before serving.
Serve over rice.

Basic (Green) Smoothie

Basic (Green) Smoothie
3/4 c yogurt (I use Yoplait Light)
1 c juice (I use Crystal Light) or water
1 banana, fresh or frozen, opt
1.25 c frozen fruit (berry medley, strawberries, peaches, etc.)
1-2 large handfuls of spinach or kale, opt
2 T flaxseed, opt

1. Place all ingredients in the blender; blend on high speed until blended well.
*Play around with ingredients and make it your own - these are just guidelines*

Aloha Bread

Aloha Bread
3/4 cup butter, softened
2 cups sugar
4 eggs
2 over-ripe bananas
4 cups [wheat] flour
2 t baking powder
1 t baking soda
1 t salt
1- 20 oz can crushed pineapple, undrained
¾-1 cup chopped pecans
1 cup coconut flakes

1. Preheat oven to 325*; grease 2 loaf pans and set aside.
2. In a large mixing bowl, cream butter, and sugar; add eggs; stir in bananas.
3. In separate bowl, mix flour, baking powder, baking soda, and salt; blend well into banana mixture, but be careful not to over mix.
4. Stir in pineapple, pecans, and coconut; mix on low speed until blended.
5. Pour into pans; bake for 60-80 minutes, until passes toothpick test.

Pineapple Upside Down Cake

Pineapple Upside Down Cake

1/2 c butter
3/4 c brown sugar, packed tightly
1 can pineapple, sliced or crushed
cherries, pitted and halved (opt)

pecan halves (opt)
1-1/3 cups flour
2/3 cup sugar
2 tsp baking powder
1/4 cup melted butter
2/3 cup milk
1 egg
1 tsp vanilla extract

1. Preheat oven to 350*.
2. Place butter in 9x9 pan and put it in the oven as it's preheating, to melt the butter.
3. Once the butter is melted, add brown sugar and mix well. Spread the butter-sugar mix evenly on bottom of pan.
4. Arrange pineapple, cherries, and pecans, in a single layer, however you want on top of butter-sugar mixture. Put aside.
5. Combine flour, sugar, and baking powder in a large mixing bowl. Add wet ingredients and mix well.
6. Spoon cake mixture into the pan and spread evenly.
7. Put in the oven and check after 30 minutes. If it passes the toothpick test, it's done.
8. Immediately invert cake onto serving dish, but leave the pan over the cake so that the brown sugar glaze can drip down on it. Serve warm or room temperature.

Apple Annie's Dip

When Apple Annie's Tea Room in San Antonio closed, I knew I had to preserve this recipe!

Apple Annie's Dip
2 blocks cream cheese, softened
1- 8.5 oz. can crushed pineapple, drained
1/2 green bell pepper, diced
1 small onion, diced
1 tsp seasoned salt
1 c chopped pecans, ground (opt)
-extra pecans (opt)
-pretzels, crackers, pita chips, cucumbers, carrots, celery, etc for dipping

1. Mix all ingredients and spread in a pie pan or other dish.
*Freezes well*
