Citrus Pie

Citrus Pie
CRUST
5 oz animal crackers
3 T sugar
pinch of salt
4 T butter, melted
FILLING
1- 14 oz can sweetened condensed milk
6 T thawed orange juice concentrate
4 egg yolks
2 t grated lemon zest + 6 T juice (2 lemons)
1 t grated orange zest
pinch of salt
WHIPPED CREAM
3/4 c heavy whipping cream, chilled
2 T sugar
1/2 t grated orange zest

1. Preheat oven to 325*.
2. Process crackers, sugar, and salt in a food processor until finely ground; add butter and pulse until combined.
3. Press crust into a 9" pie plate. Bake until fragrant and beginning to brown, about 12-14 minutes. Cool completely.
4. Whisk milk, concentrate, yolks, zests, juice, and salt until combined; pour into cooled crust.
5. Bake until center is slightly firm, about 15-17 minutes. Cool completely and then refrigerate until fully chilled, about 3 hours, or up to 24 hours.
6. Whip cream, sugar, and zest until stiff peaks form.
Serve chilled, with whipped cream.

Wassail

Wassail
8 c apple cider
2 c orange juice
1- 46 oz can pineapple juice
2- 3" cinnamon sticks
1 T whole cloves
1/2 c honey

1. Place all ingredients in a slow cooker and cook on high for two hours. Strain out cinnamon sticks and cloves before serving.

Peach Citrus Upside Down Cake

Peach Citrus Upside Down Cake
1/2 c cornmeal
8 T melted and cooled, separated
1/3 c + 3/4 c sugar, separated
salt
16 oz frozen sliced peaches, thawed and drained
1 c flour
1 t baking powder
1/8 t baking soda
1/2 c milk
zest and juice of 1 large orange
1 egg, plus 1 egg yolk


1. Preheat oven to 350*.
2. In Dutch oven, toast cornmeal over medium heat until fragrant, about 2-3 minutes, stirring frequently; transfer to a large bowl.
3. Wipe Dutch oven clean, place over medium heat, and add 2 tablespoons butter, 1/3 cup sugar, and a pinch of salt. Cook, whisking constantly, until sugar is melted, smooth, and deep golden brown, 3-5 minutes. (Mixture may look broken at first, but it will come together as you whisk.)
4. Off heat, carefully arrange peaches cut side down, covering the sugar in a tight pinwheel.
5. Whisk flour, powder, soda, and 1/2 t salt into toasted cornmeal. In a separate bowl, whisk together remaining ingredients, including 3/4 c sugar and 6 T butter, until smooth. Mix wet and dry ingredients until just combined.
6. Pour batter evenly over peaches. Bake until golden brown and passes toothpick test, about 30 minutes, rotating the Dutch oven halfway through baking.
7. Cool for about 15 minutes on a wire rack, invert on to a serving plate, and let cool completely, about an hour.
Serve topped with vanilla ice cream or whipped cream.

Irish Soda Bread

Irish Soda Bread
4 c + 1 T flour, separated
1/4 c sugar
1 t baking soda
1 1/2 t salt
1 3/4 c cold buttermilk
1 egg
1 t orange zest
1 c craisins

1. Preheat oven to 375* and line a cookie sheet with parchment paper.
2. In an electric mixer bowl, combine 4 cups flour, sugar, baking soda, and salt; mix together with paddle attachment and then mix in butter on low speed.
3. In a small bowl, beat buttermilk, egg, and orange zest; slowly add to mixer bowl.
4. Toss craisins with remaining tablespoon of flour; mix in to dough. Dough will be pretty wet.
5. Place the dough on a well-floured surface, knead it into a round loaf, and place it on parchment paper. Score an X into the top of the loaf.
6. Bake for 45-55 minutes, or until toothpick comes out clean. It should have a hollow sound when tapped. Cool on baking rack.

Hawaiian Haystacks (or Chinese Sundaes)

Hawaiian Haystacks (or Chinese Sundaes)
3 T butter
1/2 onion, finely chopped
2 boneless, skinless chicken breasts, cut into bite-sized pieces
3 cloves garlic, finely minced
1/4 c flour
2 c milk
1 c chicken broth
1 t salt
1/2 t pepper
rice
Optional toppings:
shredded coconut
slivered almond
Cheddar cheese
celery
green onions
mushrooms
tomatoes
olives
mandarin oranges
peas
pineapple
chow mein noodles
water chestnuts

1. In a large pan, melt butter over medium heat.
2. Add onion and chicken and cook until onions are soft and chicken is cooked through, about 5-6 minutes.
3. Add the garlic and stir until fragrant, about a minute.
4. Sprinkle the flour into the pan and stir to combine; cook for a minute and then slowly whisk in the milk and chicken broth.
5. Cook, stirring constantly, until sauce comes to a simmer and then add the salt and pepper. Continue simmering, stirring frequently, until the sauce has thickened, about 5-8 minutes.
6. Serve over rice, topped with toppings of your choice.

Cranberry Relish

Cranberry Relish
1- 12 oz pkg fresh cranberries
1 1/2 c sugar
zest of 2 oranges
3/4 c fresh squeezed orange juice (5-7 medium oranges)
1 T peeled, finely minced or zested fresh ginger

1. Combine all ingredients in a saucepan and cook over medium heat, stirring occasionally, until the berries pop open, about 10-15 minutes. Cool and refrigerate, covered.
Makes about one pint.

Basic (Green) Smoothie

Basic (Green) Smoothie
3/4 c yogurt (I use Yoplait Light)
1 c juice (I use Crystal Light) or water
1 banana, fresh or frozen, opt
1.25 c frozen fruit (berry medley, strawberries, peaches, etc.)
1-2 large handfuls of spinach or kale, opt
2 T flaxseed, opt

1. Place all ingredients in the blender; blend on high speed until blended well.
*Play around with ingredients and make it your own - these are just guidelines*

Orange Coffee Cake

Orange Coffee Cake
1 can refrigerated jumbo flaky biscuits
1-2 T butter, softened
1/3 c sugar
1/4 chopped walnuts (opt)
1 orange, separated
1/2 c powdered sugar
2 oz [light] cream cheese

1. Preheat oven to 350* and butter a 9" round or square pan.
2. Cut each of the 8 biscuits in half and arrange in the pan; brush butter over biscuits.
3. In a small bowl, combine sugar, walnuts, and orange zest; sprinkle over biscuits.
4. Bake for 20 minutes.
5. In the same bowl, sift powdered sugar over cream cheese and blend well; stir in orange juice.
6. Drizzle glaze over warm coffee cake and serve warm.
